A classic refreshment in the chocolate world, with a delightful twist of our own. Hazelnut feuilletine crunch, ganache with a touch of Taiwanese bamboo ginger and aged grappa, passion fruit jelly, chocolate almond cake, and topped with an airy passion fruit mousse. A PASSIONATE entremets.
Gâteau Forêt Noire 踏雪歸林
House-made liquored cherries, cooked with spices, and soaked in Alsacien kirsch (cherry brandy) and raspberry brandy. The spiced and liquored cherry juice is generously used in the cake, ganache, covered by a light snow of chantilly (with more kirsch.) Let your senses loose in this mesmerizing forest of dark chocolate.
