Sweet Thoughts of Creation──introduction of Mont Blanc by chef Yu

"The spirit of Mont Blanc, to me, is expressing the subtleness of chestnut amid the sweetness of the candying process and aged rum.

I’ve never sought to use the tartness of fruit to offset the richness of a traditional Mont Blanc. From the start, my vision was clear: to reveal a sweetness of purity and depth—one born from the natural taste of chestnuts and of aged rum.

While many see rum as a mere ingredient, I believe rum should be the heart and soul of this dessert. Three fine rums—aged seven, twelve, and twenty-three years—each chosen for its distinct character, each given its own place within the Mont Blanc. The 7yo rum folded into the almond cake and gently baked, the 12yo rum blended into chantilly cream, the 23yo rum woven into the chestnut filling.

Chestnut, rum, and cream are the pillars of a Mont Blanc. Chantilly, tart shell, and meringue are the counterpoints that give rhythm and contrast in texture.

The tart and crème d’amande offer a warmth of nuttiness; the meringue breaks with a tender crisp; the chestnut and chantilly bind with each other in a silken nuance; cubes of candied chestnut arrives like a whispered refrain. Each element sways with the waves of rum, bright and brittle, then lush and slow.

We call this Mont Blanc “嵯峨,” a name that evokes mountains rising toward the sky. Where does the peak of flavor lie? Only through constant reflection, and trail-blazing passion, may one have a glimpse of its hidden heights."
